The Holiday Cocktail – A Recipe

We present an easy version of a cocktail featured on a new drinks list. It's a large-volume prepared mix which is bursting with tastes of a Christmas time, rendering it excellent for hosting a celebration. Save the extra syrup for brunch beverages, puddings, or to mix additional servings of this cocktail.

The Bikini Cocktail

Yields 10 people

For the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

Ingredients for the Cocktail (yields 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, to finish

Method

Making the Cordial: Combine all the components in a saucepan, bring to a gentle boil, agitating so the sugar melts. Next, remove from the stove and leave to cool down entirely. Pour to a sealable bottle, seal and store in the refrigerator, it can be stored for around one month.

For the Premix: Pour the specified spirits and syrup into a sizeable container, let it rest for 60 minutes, then filter it best through cheesecloth, so it's perfectly clear.

To serve: Add 85ml of the premix to a stirring glass packed with ice, gently stirring gently for a minute to chill. Pour to a frosted cocktail glass or equivalent, garnish with the cranberries and complete it using a brief mist with the mandarin essence above the glass.
